I'm a white dude from Louisiana and I have indeed grabbed gators straight out of the swamp and eaten them before. Gators are good eating

A little bit. They're meaty in a similar way to chicken but you can tell they spend most of their time in the water. There's a slight fishiness to it. It's like a cross of chicken and fish. It's chewier than both of those too. Like it has a slight rubberiness to it. It's really good deep fried

i bet it is an ingredient of most cajun foods.. like gumbo?

It can be. But most Cajun food use some form of seafood or andouille sausage. Most common are catfish, shrimp, crab, and crawfish. Gumbo is usually shrimp and crab but it can also be chicken and sausage instead. Gator is usually eaten by itself or on a poboy (a kind of sub style sandwich). But I've also seen it used in gumbo, jambalaya, or even some pasta (like fettuccine).
